Our Story

Third generation, same ground.

Old Cookstone Road is named for the old road that once ran through our farm. My grandfather bought this land and raised six children on it. It passed to my mother, and I run it now with my parents — the third generation on the same East Tennessee ground, where Grasshopper Creek runs down toward the Tennessee River.

The Dixon line traces back to William Dixon, a weaver born in 1662 in Armagh, Ireland, here by the early 1700s and present through the Revolution.

The land is the whole point: two ponds, springs, a well that has never run anything but cold, clean water, deep soil, and slow-grown hardwood. Our mushrooms grow on that hardwood, cut right here. Nothing trucked in. Single-origin, for us, is the literal truth.

The Work

My father keeps the fields, the fence lines, and the woodlot. The hardwood our mushrooms grow on comes off this land the slow way — felled, bucked, and stacked by hand, then seasoned until it’s ready.

It isn’t nostalgia. It’s quality control.

Controlled environment

Sealed grow rooms hold temperature, humidity, fresh air, and light to the setpoint — every hour of every flush.

Single-lot traceability

Every harvest carries one lot number, from the wood it grew on to the box it ships in. Ask for the paperwork — we like showing it.

Tested potency

Functional lots are third-party tested for active compounds — and for everything that shouldn’t be there.

Our Operations

What we’re building on the ridge.

We’re scaling the farm into a purpose-built growing facility — sealed grow halls, our own substrate line, and the cold chain to supply restaurants year-round without compromising a single lot. Two sketches of where we’re headed.
